Down-hearth Spit Roasting Drip Tray

Photos

Description

A down-hearth spit roasting drip tray, the main body of which is tinned copper with wrought iron underpinnings. It is very wide because it would have been below a joint being turned on a spit to catch the juices which flow copiously while being roasted. The depression in the middle is to give an early start to the basting before there is much caught in the tray. The process of basting would have to be carried on throughout the roasting to keep the meat moist. Warm work.!
